Simple potato salad recipe

I find store-bought potato salads don’t taste good, so it’s a good thing I can make it homemade!

Potato salad: you can prepare the eggs this way for parties (credit: iStock).


  • 5 medium-sized potatoes, with the peel
  • 2 hard-boiled eggs
  • 1/2 cup celery, chopped
  • 1 tsp salt
  • 1 tsp vinegar
  • 2 tbsp mayonnaise
  • 1 tsp sugar (optional)
  • 1/3 cup onions (optional, I prefer without)


  1. Wash the potatoes and cut them in half so that they cook faster. Add them to a pot of water and set to boil. Remove the potatoes once they are soft (you can gently poke them with a fork).
  2. At the same time, you can add 2 eggs to a pot of water and set to boil. Once the water reaches boiling point, time 8 minutes and then remove the eggs, allowing them to cool.
  3. Meanwhile, chop the celery (and onions, if you’d like them).
  4. Once the eggs and potatoes are cooked and cooled, shell the eggs and slice them. Peel the potatoes and cut them in bite-size pieces.
  5. Mix together the potatoes, 1 egg and celery.
  6. Add the salt, vinegar and [optional] sugar. Now add the mayonnaise, being careful not to go overboard.
  7. Add the remaining egg slices on top so the salad looks lovely (see image).
  8. Cool in the refrigerator and enjoy. Yum!
